Creamed Spinach & Things
For the past week or so I?ve been thinking about cooking something. I?ve never really cooked before, I mostly just bake, and make dessert and things. So I finally did try and it came out wonderfully! Well except the appearance?in case you couldn?t tell, the picture up there is of creamed spinach! I don?t blame you if you couldn?t see the creamed spinach-y ness of it, since it does resemble sort of a spinach pudding or mint chutney?I think I may have over blended it? It was super easy to make too :D Creamed Spinach adapted from original recipe by Juan Carlos-Cruz 1 head of garlic peeled, w/ the top and bottom cut off a bit of olive oil (just to oil a pan) 1 big onion(any kind, i used white) sliced up 10 oz. of spinach(frozen or fresh, I used fresh) 1/4 a tsp of nutmeg(i used a little less?i really don?t like nutmeg, the smell and taste really put me off)(thankfully you can?t really taste it that much in this so it alll good ;D) 12 oz of chicken broth We shall refer to the following ingredients as ?CBJLSB? (once again just the first initials) 6 tablespoons of cream cheese(if your feeling particularly weight conscious, cut off three of the teaspoons, when I found this recipe on food network most of the review said it was perfect so I don?t imagine it will taste bad, i just added three more because i originally cut the recipe in half just to try it out, and i forgot to cut the cream cheese in half when added it, and it tasted good so i just left it like that) 1 teaspoon of butter the juice of a half a lemon 1/2 teaspoon of salt 1/2 teaspoon of black pepper Okay so we start with the oven, go heat it up to 350 degrees. Then grab some aluminum foil and using that wrap up the garlic, and leave that in the oven for about forty minutes. Mean while: Go grab a sauce pan and put in that the aforementioned olive oil and spread it around the pan and then add the onions, and cook them until they seem clear-ish or translucent. Then, when they are translucent, add in the nutmeg and the spinach. Cook those a bit until the spinach gets a little wilty and then add the chicken broth, and just stir that around for approximately five minutes, and the chicken broth will have visibly depleted. Now go back to check on the garlic. If it is forty minutes, go ahead and take it out. If not just set up your food processor or blender, and go take a break till it is forty minutes. When it is forty minutes take the garlic out and let it cool a little then add that in to the blender along with the spinach onion and nutmeg thing and also the CBJLSB. Blend it up until its sufficiently mish mashed and then take it out, and enjoy! and a small note: yours probably won?t be the avocado green you?re seeing here, I don?t know why, but the camera brightened the color of creamed spinach?
