Creepy Eyeball Cookies





Ingredients: NO Sugar
Ingredients: Sugar


Cookies:

1/2 c butter flavor shortening

1 c butter, softened

1 tsp vanilla

2 eggs

1/2 tsp salt

2 1/2 c flour

1 c Splenda Granular






Frosting:

Red Food Coloring

Black Food Coloring

THIN paintbrush

1/4 c butter flavor shortening

1 c powdered milk

1 c splenda

1/2 tsp vanilla

milk


Preheat oven to 325°




Bake Time: 18 ? 20 minutes or until bottoms are lightly brown





Cookies:

1 c butter, softened

1/2 c brown sugar

2 egg yolks

1 tsp vanilla

2 c flour

1/2 tsp salt








Frosting:

Red Food Coloring

Black Food Coloring

THIN paintbrush

1/4 c butter flavored shortening

1/2 tsp vanilla

1 1/2 c powder sugar

milk


Preheat oven to 375°




Bake Time: 15 ? 18 minutes or until bottoms begin to lightly brown











Cookies:


Cream together shortening (if using), butter and splenda or brown sugar. Add vanilla and eggs or yolks while mixing.  Add in salt and flour. Mix well.

Scoop out dough and roll into balls about the size of walnuts. I used a cookie scoop but you could us a heaping table spoon too.

Bake for the proper amount of time (listed above with the ingredients.) Cool on wire wrack. When cooled place in refrigerator for a couple hours to get cold.

Once cold it?s time to get spooky! Using the red food coloring and thin paint brush paint the veins onto the cookies. You may get a little heavy handed at first, but use one cookie to practice with and you will get the hang of it pretty quick.

Once this part is done set aside and make your Frosting.




FROSTING:


NO SUGAR: Place splenda and powdered milk in food processor and pulse until consistency of powdered sugar.


Place powdered sugar or powdered Splenda/milk into a mixing bowl. Mix in shortening vanilla and SLOWLY add milk a little at a time until the consistency you want. Add in black food coloring a little bit at a time while mixing until you get the color you like.


Using a butter knife (you could use a pastry bag but you only need a little frosting on each cookie so it?s more trouble then it?s worth.) spread a round thin layer of frosting in the center top of cookie.

Place cookies back into refrigerator for about 1 hour before serving. Make about 27 eyeballs?er?cookies? icon wink Creepy Eyeball Cookies
