Crunchy Veg Salad
Just had a marvelous Diwali this year...quality time with family, the lighting of the diyas in the evenings, fun time with dear sis when designing our first rangoli and the most important of all - mom`s special Diwali sweet dishes! All together it was one memorable Diwali.
Now after an overload of sweets, a simple refreshing salad for lunch or dinner sounds welcoming. I love the following combo of veggies & fruits. With its riot of colors, it looks truly inviting & has just the right amount of sweetness to it. This requires a basic dressing of olive oil & acid. Follow a ratio of 3:1 for the dressing - 3 parts olive oil with one part acid. But some do follow a ratio of 2:1 which I think is ok too. Here I have used vinegar for the acid. For a variation, next time I will make the same by adding lemon juice in place of vinegar. For the salad you will need : lettuce (i dint add it) the common light green or white head variety of cabbage red or purple cabbage red, yellow & green bell peppers pomegranate carrot, grated pineapple, cut into small cubes For the dressing you will need : Extra-virgin olive oil Vinegar a little mustard paste (optional) salt & pepper to taste * Mix together all the ingredients of the dressing in a small jar so that they are well combined. Set aside. * Steam the cabbages for few mins. I prefer having them this way instead of raw. But do not over cook them. They have to remain crunchy. * In a serving bowl mix all the vegetables & fruits. Chill in fridge till serving time. * At serving time, sprinkle a desired amount of dressing onto the salad. You may serve them on a bed of lettuce. Nutritive Value of the ingredients used : * Lettuce - It has high water content, low levels of sodium & low in calories. * Cabbage - Rich in fiber & thus helps retain water in the body. Being rich in vitamin C, it reduces the free radicals in your body which are the main causes of aging. It acts as a good detoxifier by purifying blood & removing toxins. * Bell Peppers - Because they contain vitamin C & beta carotene, they seem to provide a protective effect against cataracts. They are also a good source of vitamin A, B6 & folic acid. * Pomegranate - These are good source of vitamin A, C, E, folic acid. Also, a regular intake of pomegranate juice can maintain a good flow of blood in the body & reduce bad cholestrol. * Pineapple - These contain vitamin C, calcium ,potassium. The vitamin C contained in it helps fight cold & flu. related searches : Crunchy
