CSD Day 8 & Cookie Dough Truffles
Well March Madness is underway and off to a great start. To get into the tournament spirit I figured I would make myself a basketball themed snack to enjoy while I watched my wildcats play this afternoon. Good news is my Cats beat Princeton and I don’t think I took a seat the entire game, the bad news; I am pretty sure I ate 4 maybe 5 of these little balls throughout the game. I blame it on stress. These truffles are extremely addicting so consider yourself warned. Cookie Dough Truffles 1/4 c cookie dough almond butter(see below) 1/2 c dates 1 tsp coconut oil 1/4 c oat flour (gluten free oats) 1/4 c cashew flour (cashews ground) 1 tsp vanilla 2 T dark chocolate chips 1/2 T almond milk 1 tsp chia seeds Directions: Prepare almond butter and set aside. Process oats in a blender or food processor until a flour forms set aside, do the same to the cashews and mix with the oats. In a food processor combine dates, coconut oil, and vanilla until smooth, combine mixture with almond butter, almond milk and chia. Fold oats and cashews into the date mixture until combined, add in chocolate chips, roll into balls and serve! Cookie Dough Almond Butter adapted from edible perspective 2 c raw almonds 1 tsp almond extract 1 tsp vanilla extract 1 tsp grapeseed oil 1/4 tsp salt 5-10 drops NuNaturals vanilla liquid stevia 1/4 c coarsely chopped dark chocolate chips Directions: Process almonds until smooth stirring occasionally. Add in the rest of the ingredients and process again until smooth. Pour mixture into a bowl and let cool a few minutes before stirring in chocolate. Serve with a spoon and devour! yields 10 balls 110 calories 7g fat 2g protein 1.5 g fiber per cookie ball Process almonds in the food processor until smooth, stir in the rest of the ingredients except the chocolate chips and continue to process until combined. Remove mixture and set aside. Process dates with coconut oil and vanilla until smooth, pour mixture into a bowl, stir in almond butter, chia seeds, and almond milk. Fold in oats, cashews, and chocolate chips. Stir together and form into small balls. If you are lucky enough to have leftovers be sure to store them in the fridge! So rich and doughy these balls definitely hit the spot. High in protein and low in sugar this little dessert like snack will give you plenty of energy without a crash. I am so in love with these little balls I can’t wait to experiment with more flavor combinations!
