Cucumber and Radish Salad with Creamy Dill Dressing
I received a bunch of radishes in my CSA box last week and now I think I am a radish addict! I ate the ones I received and bought more. I love how they are spicy and crunchy and watery....all at the same time. For this salad, I paired radish slices with cucumbers and chopped romaine and topped the entire thing with a low fat, but still creamy, dill dressing. This salad is perfect for a hot summer evening {which we still aren't experiencing in San Diego....those don't start here until late June}.
Creamy Dill Dressing (for 2 salads) -2 tablespoons of light sour cream -1 tablespoon of low fat mayonnaise -2 tablespoons of white wine vinegar -1 tablespoon of dry dill -1/2 teaspoon onion powder -1/2 tablespoon honey -salt and pepper -a dash of water, if necessary to thin the dressing out a tiny bit - so just add about 1/2 of a tablespoon) 1. Whisk everything (but the water) together. Taste, adjust salt and pepper if necessary and add a splash of water if the dressing is too thick. Radish and Cucumber Salad (for two) -2 heaping cups of chopped romaine -3 radishes, thinly sliced -1/2 a cucumber, thinly sliced 1.
