Curried Chickpeas

I am alive! I am sorry if I had you all on your wooden Swing set worrying over my absence. I have a good excuse, i promise.

With what started out as a cough around my birthday, was ignored, then knocked me on my ass over Christmas, came back a month later to REALLY knock me on my ass these last few days. I have walking pneumonia. I have spent the last few days laid up in bed with fever, body aches, chest pain, a horrendous cough, and extreme fatigue. I divulge this personal matter with you all because if anyone is feeling sick?it should not be ignored. If I can be a testimony to anyone- let it be known that you do not. EVER. want to be that sick. Especially if you live alone. And have a dog that needs to be walked 3 x per day.

But now that I?m feeling human again I came to show some love in the form of yummy eats and a giveaway.

Consider it a Get Well Present.

Right before I was cursed by the plague, I prepared a quick dish that was on my google reader and almost immediately after i read it- i HAD to have it.

Slow Cooker Curried Chickpeas (courtesy of $5Dinnermom.com)

Ingredients: 1 lb dry chickpeas, 2 cups vegetable chicken broth, 8 oz tomato sauce, 1 tbsp curry powder, garlic powder, salt, pepper

Begin by soaking the chickpeas in water overnight, making sure to discard any foreign items. Once the peas have soaked overnight, rinse them thoroughly and parboil for 5 minutes.

Once the chickpeas are parboiled, add them to a slow cooker with vegetable broth, curry powder, tomato sauce, garlic, salt and pepper. Cover and cook on high for 4 hrs or on low for 8 hrs.

This smells amazing by the way? the only thing I would do differently is to add more curry powder. and possibly add a touch of cumin. But for my first time using dried chickpeas, this came out great!

Serve with white rice and a veggie :-)
