Curried Plantain w/ Prawns & Black Beans
I bought plantains this weekend thinking I'll make Cuban plantain chips called "mariquetas" but I ended up not making them after all so I was kind of stuck with a couple of nicely ripened plantains. I thought of just pan frying them and serving them with rice kind of like arroz a la Cubana but it was complicated and I was not really interested in making something fancy. So I just cut them up, pan fried them in little olive oil. It looked kind of boring and since they have a potato like texture I thought turning them into a curry would be a good idea. I sauteed some chopped onions and garlic in 2 tablespoons of coconut cream, then added a tablespoon of Madras curry powder, sauteed it until fragrant, then added the prawns, seasoned it with salt and pepper, added the plantains then poured in the remaining canned coconut cream and added half a can of rinsed black beans. It turn out really tasty, kind of mildly sweet from the coconut cream and the plantains and fragrant and lightly spicy from the curry powder. It was a little rich so I sprinkled it with chopped cilantro for a little burst of freshness and served it with plain white rice. It wasn't bad at all. related searches : Curried
