Daddy's Lemon Ice Box Pie "Granny's Recipe"

This is a very easy and delicious dessert, light and tart, perfect for an Easter dinner! The one thing I remember most about this pie is that it was my father's all time favorite. He loved the combination taste of the tart and sweetness together. Mother could make this pie in a pinch. With few ingredients and little preparation, you can have this pie ready in no time.

Daddy's Lemon Ice Box Pie "Granny's Recipe"

4 eggs
2 14 oz. can sweetened condense milk
1/2 cup lemon juice
1 12 oz box vanilla wafers

Arrange a layer of vanilla wafers evenly in the bottom of a 8-inch pie plate; set aside. In a medium bowl, beat together with a whisk, eggs, sweetened condensed milk, and lemon juice until creamy and thick. Pour half of lemon mixture over the vanilla wafer lined pie plate. Arrange another layer of vanilla wafers evenly on top of the lemon mixture. Pour the remainder of the lemon mixture over the lined vanilla wafers. Arrange another layer of vanilla wafers evenly on top of the lemon mixture. Arrange vanilla wafers around pie, pushing into the filling so only 1/2 the wafer is showing. Refrigerate at least 1 hour or overnight before serving.
