Dahi Vada
Dahi Vada Serves: 6 Ingredients 1 cup moong dal, washed and soaked for 30 minutes 1 cup urad dal, washed and soaked for 30 minutes 1/2 cup mixed raisins, sultanas and chopped almonds ( optional ) Salt to taste 2.5 ml ( 1/2 teaspoon ) baking powder 1 green chilli,finely chopped Oil for deep frying 300 ml unsweetened yogurt 1/2 teaspoon salt 1 teaspoon ( 5 ml ) red chilli powder 1 teaspoon cumin seeds 1 teaspoon coriander seeds 500 ml cold water 1 tablespoon chopped coriander leaves for garnishing Method Drain moong and urad dal and grind separately. Add water, a little at a time, to make thick and coarse paste of moong dal, and very fine paste of urad dal. Place dal paste in a bowl and add baking powder, dry fruits ( optional ) and green chillies. Mix well and make small, flat vadas/ rissoles and deep - fry them till golden brown, 5 - 6 minutes. Fry vadas in batches. Drain on paper and immerse in cold water for 2 minutes. Gently squeeze out excess water and arrange on a shallow serving dish.
Blend yogurt with salt and chilli powder. Pour the yogurt over the vadas. In a non - stick frying pan dry roast cumin and coriander seeds till they begin to smoke. Remove from heat and while still hot, crush them with a rolling pin. Sprinkle this powder over the yogurt. Garnish with chopped coriander leaves and serve with sweet and sour chutney. related searches : Dahi
