A very good day to all there..!! Today I'm bringing for you........... 1. Simple Dal Curry: ![]() This is a very simple quick dal relished by all in my family.. Ingredients: 1. Toor dal - 1/2 cup, 2. Split moong dal - 1/4 cup, 3. Beans, Carrot - 1/2 cup chopped small, 4. Tomato - 1 big finely chopped, 5. Pearl onions - 5, 6. Turmeric powder - 1 tsp, 7. Red chilly powder - 2 tsp, 8. Coriander powder - 1 tsp(optional), 9. Sambar powder - 2 tsp, 10. Tamarind juice - 4 tsp, 11. Green/red dry chilly - 1, 12. Curry leaves - 1 string, 13. Mustard seeds - 1 tsp, 14. Cumin seeds - 1 tsp, 15. Methi/Fenugreek seeds - 1 tsp, 16. Asefeotida powder - 1 tsp, 17. Salt - as per taste, 18. Oil - as per taste. How to make this? 1. In a Pressure cooker, put the toor and moong dal, onions, methi, 1/2 tsp cumin, onions, tomato, beans and carrot, turmeric powder, asefeotida powder and enough water and put on heat for 2 whistles. 2. After cooling, mash them well. Heat a kadai, splutter the 1/2 tsp cumin and mustard seeds. Add the chilly and curry leaves and the mashed dal with salt. 3. Add the tamarind juice as per taste and leave for a boil and serve. Tastes great with steaming rice..! I'm sending this dal curry to, 1. Ashwini's 'Lentils Mela' . ![]() 2. Classic Mutton Treat: In this, I'm going to give you Mutton Kulambu(Curry), Mutton soup, Mutto pepper fry, Neeragaram with mutton kulambu. ![]() 1. Mutton Kulambu: Ingredients: 1. Mutton - 1/2 kg, 2. Onions - 1/2 cup(Finely chopped), 3. Tomato - 1(finely chopped), 4. Curry leaves - 1 string, 5. Turmeric powder - 2 tsp, 6. Red chilly powder - 4 tsp, 7. Coriander powder - 5 tsp, 8. Cilantro for garnish. 9. Kalpasi - 1 tsp, 10. Bay leaves - 2, 11. Ginger-garlic paste - 4 tsp, 12. Green chilly - 1, 13. Salt - as per taste, 14. Oil - as per taste, 15. Tamarind juice - 1/4 cup. For crushing: 1. Cinnamon stick - 1, 2. Cloves - 2, 3. Fennel seeds - 1 tsp. For grinding: 1. Grated Coconut - 1/2 cup, 2. Fennel seeds - 1 tsp. How to make this? 1. Heat oil in pressure cooker, add the crushed spices let them splutter. Add the onions, green chilly, curry leaves, bay leaf, kalpasi and saute a min. 2. Add the ginger-garlic paste and saute a min not to burn. Add the tomatoes and saute till they get mashed. 3. Add the cleaned mutton pieces and add the turmeric powder and 2 tsp salt and enough water for cooking. Put for 6 whistles based on your cooker. 4. After done, put on the heat add the red chilly powder, coriander powder, salt, grounded coconut and enough water for the curry and leave for boiling. 5. Add enough tamarind juice as per taste and leave for boiling till the curry reaches its consistency. 6. Garnish with cilantro and serve hot with steaming rice..! 2. Mutton Soup: Ingredients: 1. Mutton with bones - 1/4 kg, 2. Ginger garlic paste - 3 tsp, 3. Crushed spices(Cinnamon, cloves, fennel) - 2 tsp, 4. Green chilly - 1, 5. Onions - 1 finely chopped, 6. Garlic cloves - 5 finely chopped, 7. Tomato - 2 fienly chopped, 8. Curry leaves and cilantro for garnish, 9. Coriander powder - 2 tsp, 10. Salt - as per taste, 11. Oil - as per taste, 12. Coconut milk - 1/4 cup, To crush: 1. Fresh black peppercorns - 2 tsp, 2. Cumin seeds - 1 tsp. How to make this? 1. In a pressure cooker, add the mutton, turmeric powder, ginger garlic paste, little salt and pressure cook till done. 2. Heat oil in kadai, add the crushed cinnamon, cloves, fennel and saute a min. Add the onions, garlic and saute for 2mins. 3. Add the tomatoes, coriander powder and saute till the raw smell goes. Now add the cooked mutton with stalk and enough salt and sprinkle the crushed pepper, cumin powder and leave for boil. 4. When the soup boils well, garnish with curry leaf and cilantro. Note: If you want the soup to be little tangy, add a tsp of lemon juice. Serve with hot rice or have as a hot soup. 3. Pepper Mutton Fry: ![]() Ingredients: 1. Mutton(Boneless) - 1/2 kg, 2. Onions - 3 finely chopped, 3. Tomato - 2 finely chopped, 4. Curry leaves - 1 string, 5. Garlic cloves - 5 finely chopped, 6. Ginger garlic paste - 3 tsp, 7. Red chilly powder - 3 tsp, 8. Freshly ground pepper - 3 tsp, 9. Turmeric powder - 1 tsp, 10. Coriander powder - 3 tsp, 11. Ground coconut paste - 4 tsp, 12. Salt - as per taste, 13. Oil - for frying, 14. Cilantro for garnish. how to make this? 1. Cook the mutton in a pressure cooker with little gingergarlic paste and turmeric powder and keep aside. 2. In a kadai, heat oil and splutter the crushed spices. Add the onion and garlic, curry leaves and saute a min. 3. Add the tomatoes and saute till they get mashed, add the remaining gingergarlic paste, red chilly powder, coriander powder, turmeric powder, salt and saute a min till the raw smell goes. 4. Add the cooked mutton with the stalk and cook till it thickens. Now add the coconut paste and fry till all the water evaporates. 5. Add oil in between and fry well till the mutton pieces look tender, finally add the ground pepper and mix well. 6. Garnish with cilantro and serve..!! ![]() Note: Neeragaram - Overnight soaked rice in water with salt. This taste great when had with a spoon of mutton kulambu for each gulp.
