Dark Chocolate cake, Sweet kolukattai and Veg curries
Hi dear friends,
Sanghi's wishes for a wonderful weekend..!;) I'm presenting 4 delicious dishes today. Sweets and yummy veg curries for you.. Try and enjoy! 1. Eggless Dark Chocolate cake: Chocolate cake is one of my favourite. One evening, bored of the day, thought i can refresh my mind with a choco cake.. Here's a simple version for you.. ![]() Ingredients: 1. Maida/All purpose flour - 1 cup, 2. Unsweetened Cocoa powder - 1/2 cup, 3. Baking powder - 1 tsp, 4. Baking soda - 1 tsp, 5. Sugar - 3/4 cup, 6. Milk - 1 cup, 7. Vegetable oil - 1 cup, 8. Vanilla essence - 3 drops, 9. Salt - a pinch, 10. Butter - 2 sticks. How to make this? 1. Take a bowl and put the dry ingredients(flour,cocoa,baking powder,soda,sugar) and mix them well together. 2. Combine all the liquid ingredients(milk,oil,vanilla essence) one by one and stir well smoothly without forming bubbles. 3. When the cake mix is nicely mixed and smooth, convert it to a butter greased ceramic bowl such that the poured mxture covers only 1/4 level of the bowl. Cover the top of the bowl with aluminium foil. 4. Heat little more than 1/4 level water in the rice cooker. When the water is well heated, place the cake bowl in to it carefully. 5. Wait for 45mins, and take it out. Check by poking a knife in the center. If the knife comes out smooth wiithout any crumbles sticking. Then cake is done. 6. If it sticks in the knife, then probably it needs little more time to cook. Cover again and place in to the cooker, Add water in the cooker if needed. 7. Take out after done and cool it fully. 8. When it is cooled, remove cover and place a plate on top, turn the bowl upside down and shake a little. The cake will fall to the plate. Yummy Choco cake is ready..! Enjoy! 2. Sweet kolukattai: Delicious evening snack i prepared for my hubby. Mixed with nuts make it more healthier.. Enjoy! ![]() Ingredients: 1. Rice flour - 2 cups, 2. Jaggery - 1 cup(as needed), 3. Salt - a pinch, 4. Cardomom powder - 1 tsp, 5. Cashewnuts - 10, 6. Pista - 10, 7. Grated coconut - 1 cup, 8. Ghee - 3 tsp. How to make this? 1. Heat jaggery in a bowl until it melts fully. Keep aside. 2. Boil 2 cups of water till tolerable heat. 3. Take a bowl and mix rice flour, salt, cardomom powder, nuts, grated coconuts together. 4. Add the jaggery and mix together with a spatula. Now add the water little by little till you get a dough with a rolling consistency. Check by making a ball in your hand. 5. Finally add the ghee and make balls or any shape of your wish. 6. Steam the balls and serve as a snack.. Yummy healthy snack ready..! 3. Potato Brinjal kosthu: This is my grandpa's recipe.. He makes it even more yummier. I love it more.. I'll eat more idli's if he makes this for me. 'Dedicating to my Thatha(Grandpa)'. ![]() Ingredients: 1. Potato - 2 cut in to small pieces, 2. Brinjal - 1 cut in to small pieces, 3. Tomato - 2 finely chopped, 4. Onions - 2 finely chopped, 5. Green chilly - 5(as needed) Slit lengthwise, 6. Curry leaves - 2 strings, 7. Ginger - 1 inch finely chopped, 8. Mustard seeds - 1 tsp, 9. Urad dhal/ulundhu - 1 tsp, 10. Oil - as needed, 11. Salt - as needed, 12. Gram flour/kadalai maavu - 3 tsp dissolve in little water. 13. Turmeric powder - 1 tsp, 14. Lemon juice - 1 tsp(Optional), 15. Cilantro for garnish. How to make this? 1. Heat oil in kadai, add the urad dhal and mustard seeds, let them splutter. Now add the green chillies, ginger, curry leaves and saute a min. 2. Now add the onions and saute till transparent. Add the tomatoes and saute till mashed. 3. Add the potatoes and brinjal saute well for 2mins. Add teh salt, turmeric powder and saute. 4. Add enough water and allow the veggies to cook on medium flame. 5. When they are cooked, slightly mash the brinjal and potatoes with a spatula. 6. Now add the gram flour and mix well in medium flame. If needed add water depending on consistency. 7. Add lemon juice if needed. Now leave for a boil and garnish with cilantro. Delicious kosthu is ready to relish with hot idli/dosa..! 4. Coconut chutney: This is our family's all-time favourite chutney! Enjoy! ![]() Ingredients: 1. Grated coconuts - 1 cup, 2. Green chillies - 5, 3. Tamarind paste - a pinch, 4. Salt - as needed, 5. Mustard seeds - 1 tsp, 6. Urad dhal - 1 tsp, 7. Curry leaves - 1 string, 8. Asefeotida powder - 1 tsp, 9. Oil - as needed, 10. Pearl onions - 8 finely chopped. How to make this? In a blender, put the coconut, chillies, tamarind and salt and grind into a little fine paste. Adjust salt by tasting. Convert in to a serving bowl. Heat oil in kadai, add the urad dhal, mustard seeds let them splutter. Add the asefeotida powder, curry leaves, onoins and saute a min. Pour it with oil on the chutney. Mix and serve.
