Date Muffins
Healthiest muffin I have ever baked......do try this
![]() Ingredients: Whole wheat flour - 1cup All purpose flour - 1 cup Honey - 1/3 cup Cinnamon powder - 1tsp Orange zest - 1/4 tsp Baking powder - 2 tsp Baking soda - 1.5 tsp Salt - 1/2 tsp Egg - 1 medium Vanilla essence - 1tsp Canola oil - 1/4 cup Whole Milk - 2/3 cup Orange juice - 1/3 cup Chopped dates - 1 cup Chopped pineapples - 1/2 cup Chopped walnuts - 1/4 cup [optional] Method: Pre-heat the oven at 375 degree F and grease the muffin pan Sift all the powder ingredients and keep it aside Beat egg, oil, honey, vanilla essence, oil, juice, orange zest lightly for 2 minutes Add the powder ingredients from step 1 and fold in nicelyAdd milk little by little to make a nice pasteAdd the chopped dates, pineapple and walnuts and mix it with hand blender for less than a minuteSpoon the mix in the muffin cups and bake for 25 minutes till the muffin turns brown and a toothpick inserted in the center come out clean Notes: My muffins didn't turn very sweet, but the pieces of chopped dates and pineapple in between bites added the sweetness which I liked it. Increase the quantity of honey for desired sweetnessAdding too much of orange zest can add bitterness. If the final mixture looks dry, then add more milk. Remember, the mixture should not be liquid. The consistency should be enough to spoon it easilyWhile baking if the muffins turn brown quickly then reduce the heat to 350 and let it bake for remaining time related searches : Date
