Day Two: Susan G. Komen, Bake for the Cure

Today's recipe is dedicated to the Susan G. Komen's Bake for the Cure that I mentioned in Wednesday's post. So today we are going to take an old one pot classic which can be found in the Bake for the Cure cookbook and turn it into a Belleicious Dinner the whole family is sure to love. It is easy, hearty, flavorful and can be made ahead of time and popped in the freezer.

I grew up in the South where when someone was in need you brought them something homemade, whether it was a desert, bread or a meal. It was your way of saying I care and I am here for you. One of the rules for Bake for the Cure is to use a recipe from the Bake for the Cure cookbook. When I saw this recipe it immediately brought me back to my childhood where I can so vividly remember either being on the receiving end of this dish or helping my mom make this for a friend in need.

I decided with the weather getting cooler this is the perfect dish to make; however, we all know Ms. Belleicious and Ms. Belleicious must twist and shout her way around a recipe to make it her own. So what on earth am I talking about? It is a Taco Bake. Well, according to the cookbook it is called a Taco Bake but I grew up knowing it as a Tamale Pie or Taco Casserole.

Boy, did I do a good job with this one girls. I am going to call it my Cheesy Green Chile Taco Pie. Sounds good already doesn't it? Just wait till you actually try it. The extra prize in this dish is the green chile cornbread. Make it in a pie dish, make it in a pan, it doesn't matter what you call it or what you make it in but just do everyone a favor and MAKE IT! LOL!
