Delicious ?dilla
YAY for making it to Friday…..well we’re almost there! I don’t mind Friday’s at work very much, for a few reasons: well because it’s Friday it’s the day before Saturday and I get to wear jeans to work I’m so proud of myself for making it to the gym Monday, Tuesday, Wednesday, AND today all very early in the morning. Today, I went to a 6am cycle class taught by no other than Tyler. That is the 3rd 6am class I’ve attended this week……….shew no wonder it’s 9:50 and I’m already tired! Preworkout Fuel: Cup of coffee (made in the keurig) with 1 packet of truvia and skim milk along with one of my favorite Larabars. After the gym, I came home and was productive!!! I unloaded and loaded the dishwasher, packed my lunch and midafternoon snack, answered emails, got ready for work, and ate my favorite meal of the day….breakfast. Breakfast: 3/4 cup oats (I felt extra hungry this morning so I ate extra oats) 1 cup water fresh cut strawberries pecans drizzle of agave nectar Breakfast was just as delicious as it was beautiful! Lunch: Chasing around those little rascals at work sure works up an appetite!! I make it sound like I heard animals for a living…….not animals, just small children! Reheated Mellow Mushroom pizza is the bomb dot com!!! By the time that my afternoon hunger pains started I was thrilled I hd made a green monster this moring before heading into work. My green monster was made using: 1 tbsp flax seed 2 cups spinach 1 banana 5 frozen strawberries 1 cup unsweetened vanilla almond milk I was able to sip on my Green Monster all afternoon. I think I’ve decided that I like the spinach and banana green monster better than the spinach, strawberry, and banana combo. By the time the herd of kids finally left, I was starrrrrving! I opted for bringing my work laptop home to finish my notes/documentation so that I could eat ASAP!!! The minute I walked into the apartment, I started preheating the oven to 350F. I cut up a sweet potato and tossed it with olive oil, sea salt, and cinnamon. Onto a baking sheet and into the oven they went. During the first 10 minutes of the sweet potatoes cooking, I chopped up some bell pepper (red, orange, and yellow) and onion and added it to a pan with spinach. I cooked over medium heat until the spinach had wilted and the onions were smelling delicious! Next, I assembled a quasadilla using a pita loaf, a Laughing Cow cheese, the veggies, and the remains of this can opened earlier in the week: After my ‘dilla was assembled, I added it to the baking sheet with the sweet potatoes and baked for about 10 minutes. The ‘dilla was delicious especially because I ended up topping it with some salsa! Following dinner, work began Barf. At least I gotta type notes while kicked back at home though, right?!?!
