Christmas (Holiday) Cake

I just can’t say it enough… I loooovveeeee the holidays! :D I love everything about this time of year! So much! This evening’s baking creation was specifically inspired by the very special Yule Log and its wonderful accompanying holiday music!



Christmas (Holiday) Cake

Ingredients:


1 cup all-purpose flour

1/2 cup sugar

1/2 cup brown sugar

2 eggs

1/4 cup vanilla yogurt 

1/4 tsp cinnamon

1/4 tsp nutmeg

1/4 tsp ginger

1 tsp baking powder

1 tsp vanilla extract

1 cup semisweet chocolate chips  

Holiday sprinkles (optional)


Directions:



Preheat oven to 350*F.
Spray 9″ X 9″ baking pan with non-stick spray.
Combine all ingredients in a large mixing bowl. Blend well.
Spread batter evenly in the prepared pan.



Top batter with holiday sprinkles (optional) before baking in oven.



Bake for 25-30 minutes until a toothpick inserted in the center comes out clean.
Cool completely in pan before cutting.
Enjoy!


The final product was absolutely scrum-diddly-umptious! :) The Christmas Cake turned light and fluffy, sweet (chocolate chips and cinnamon) and a tad spicy (nutmeg and ginger). The overall flavor completely reminded me of the holidays! :D
