Ingredients:
Flour ? 2 cups
Sugar ? 3/4 cup (if using dried cranberries as they are already sweetened. For fresh ones you will have to use 1 cup)
Baking powder ? 1 1/2 tsp
Baking soda ? 1 1/2 tsp
Pecans toasted ? 1/2 cup (spread out the nuts on a baking tin and pop it into an oven heated to 180 degree C, for around 8-10 mins. Wrap the toasted nuts in a kitchen towel and leave to steam for a few mins and then rub off the skin. Chop and use.)
Dried Cranberries ? 1 cup
Salt ? 1/2 tsp
Orange zest ? 1 tbsp
Orange juice ? 3/4 cup
Cold unsalted butter ? 4 tbsp
Egg ? 1 well beaten
Vanilla ? 1 tsp

Preparation:

Preheat oven to 180 degree C and place rack in the middle of the oven.
Butter a loaf pan and line it with parchment paper.

In a small bowl mix together the beaten egg, orange juice and vanilla essence.

In another bowl mix together all the dry ingredients (flour, sugar, baking powder, baking soda, salt and orange zest).

Cut the cold butter into small pieces and place it along with the dry ingredients. Now work with your fingers and mix the butter with the dry ingredients to make small crumbs

Fold in the wet ingredients into the dry ingredients until well combined.
Do not over mix.

Now add the nuts and the cranberries into the batter and mix.
Pour the batter into the prepared pan and place it into the preheated oven and bake for around 30-40 mins or until a toothpick inserted in the centre comes out clean.

Leave to cool completely before slicing.
