Ingredients:
110g dates - remove seeds and chopped
30g roasted sunflower seeds
3 eggs - separate the yolks and the whites
130g butter
3/4 cup sugar
2 cups + 3 tbsp all purpose flour
1/2 cup milk
1 1/2 tsp baking powder
1 1/2 tsp baking soda
1 1/2 tsp vanilla essence

Preparation:
Rub dates with the 3 tbsp of flour to prevent it from sticking together and keep aside.
Beat butter and sugar until fluffy.
Add eggs one at a time as well as essence and continue beating.
In a separate bowl, shift flour, baking soda and baking essence.
Alternately, fold in the flour mixture and milk into the beaten ingredients until smooth.
Beat egg whites to a soft peak.
Fold in the whites as well as the dates and sunflower seeds.
Line a baking tray (size depends on how thick or thin you like the cake to be) all over with parchment paper and rub some butter on it.
Add the cake mixture inside.
Bake at 210c for 30-40 mins (preheated for 10mins) or until the cake is done.
Once cool down, cut into any shapes you like.
