My handwritten recipe card is stained from frequent use and yellowed with age. The directions are very simple. Cream butter and sugar until fluffy. Mix in egg. Sift flour, baking soda and baking powder together. Then alternate the flour mixture and milk into the mixing bowl. Add vanilla.
On a floured surface roll the cookie dough thin. Cut with a 2 or 3 inch round cutter. Place on cookie sheet. Drop a teaspoon of pineapple preserves in the middle. Place another cookie round on top and seal the edges.
