Ingredients:
3 carrots
1 beet (optional)
1000 ml homo milk ( can also put more)
1/4 cup sugar( this is the right amount)
3/4 cup dry fruits (raisin, cashews, pistachios)
5 green cardamoms
2.5 tbsp desi ghee

Preparation:
Wash the carrots and scrape them before grating. Peel the beet and grate as well. The grated mixture will be about 6.5 cups.
Combine milk, grated carrots and beet in a heavy bottomed wide pan. Cook it on high for 20 minutes, stirring when required. The carrots will get softer and look like this. It will take approx. 40 minutes to to get all the milk dried up.
In the meantime ground cardamom,discarding the shells. Heat Desi ghee in small pan. Fry the nuts and raisins and keep them aside for a while. Use the left over ghee for tempering a lentil. Add sugar and keep stirring the mixture for few minutes until it holds together well. Add cardamom powder and half of the dry fruits, mix well and turn off the flame. Serve it warm with more nuts on top.
