Ingredients:
- 150g sponge fingers or ladyfingers
- 500g Greek style yogurt or Vanilla yogurt
- 3/4 tsp cinnamon
- 4 tsp vanilla extract (not needed if you use vanilla yoghurt)
- 15 ml dark aromatic rum (Jamaican or Puerto Rican are most aromatic)
- 125 ml instant drink made from barley, rye and chicory - caffeine free
- 50g grated dark chocolate

Preparation:
- Mix together Greek style yoghurt with 4tsp of vanilla extract and 3/4 tsp of cinnamon and put it straight into the freezer for an hour or two until part frozen (no need for vanilla extract if you use vanilla flavored yoghurt). Line a loaf tin with cling film.
- In a bowl mix together caffeine-free drink and rum. Quickly dip sponge fingers in Caro and rum mixture and place one by one to cover the bottom of the loaf tin.
- Spoon the yogurt over the sponge fingers (they need to be covered completely). Sprinkle with grated dark chocolate.
- Quickly dip more sponge fingers in the rum caffeine-free mixture and place on top of the grated chocolate layer. Add another layer of yogurt and grated chocolate.
- Make the last layer with the remaining sponge fingers, yoghurt and dark chocolate.
- Place the loaf tin in the freezer for one hour. After one hour put it in the fridge leaving overnight if possible. Flavors are much more intensive if you leave it at the room temperature for at least 20 minutes before serving.
