Ingredients:
For the Bottom Layer
1 cup all purpose flour
1/2 cup soften salted butter
1/4 cup icing sugar
For the Lemon Topping
1 cup icing sugar
2 eggs - lightly beaten
1/2 tsp baking powder
3 tbsp lemon juice

Preparation:
For the Bottom Layer
All all ingredient into a large bowl.
Blend with finger until crumbly
Grease a medium size baking tray and add the crumble on top.
Press until it becomes a packed layer.
Baked at 200c preheated oven (10 mins) for about 15 mins or until it becomes light brown in color.
Remove from oven.
Mix all the ingredients for the topping and pour on top of the baked layer immediately.
Place into the oven again and bake for another 20-25 mins until the top becomes brown and firm.
Remove, let it cool down and cut into squares.
