Ingredients:
200g lotus nuts - washed (buy the pre-prepared ones)
6 pcs water chestnuts - remove skin and cut into 4 pieces
50g dried red dates - soaked in water to soften - for abt 20 mins
30g dried wolfberries/kei chi - soaked in water to soften - for abt 20 mins
45g rock sugar (or the amount you prefer)
1 lemongrass - crushed
1 cinnamon stick
1 star anise
4 cloves

Preparation:
Simmer over low heat about 1/2 litre of water with the lemongrass and spices inside.
Once you notice small bubbles forming, add in the red dates and wolfberries.
Continue to simmer for another 20 mins. By now both of these ingredients would have been expanded.
Add in the lotus nuts and water chestnuts.
Simmer for another 15 mins and that's it.
