Ingredients:
2 1/2 cups unsweetened coconut flakes
2 eggs
1/2 cup melted butter
1/2 cup condensed milk
1/2 cup all purpose flour
1 1/2 tsp baking soda
1 orange - extract juice
1 tsp orange rind
For Topping
1 orange - remove skin and cut into small pieces

Preparation:
Sift flour and baking soda together.
Mix in all of the ingredients except the orange pieces.
Place cupcakes cases into a muffin tin and divide the mixture between them
Add the orange pieces on top as much as your prefer on each of the cakes.
Bake at 220C for about 35 mins or until cakes are done.
Remove and let it cool down before serving.
