Ingredients:
300 grams pineapple flesh, cut into large cubes
30 grams honey
1" piece of cinnamon, coarsely crushed
1 star anise (The prettiest of spices, I think)
11/2 teaspoons of orange rind, grated
Juice of half a lemon
A pinch of red chili powder
1 teaspoon butter (optional)
1/3 cup pomegranate seeds
A handful of coriander leaves, chopped
4 tablespoons of low fat cream or curd or yoghurt (optional)

Preparation:
step 1
Place the cubed pineapple in a roasting pan.
step 2
Heat the honey, cinnamon, star anise, butter (if using), orange rind and lemon juice in a pan gently and pour it over the pineapple. Sprinkle the chili powder over the fruit. Roast in a pre heated oven at 200 C for 25 minutes
step 3
Toss the pomegranate seeds and coriander leaves over the roasted pineapple.Serve with curd or yoghurt or cream if you like.
