Rum chocolate mousse

Ingredients:

Ok by now you probably saying, she loves whipped cream she put it in everything. No not really but I do like homemade whipped cream!! I can go in the fridge and have it whenever, I use to only have it on special events because it isn't cheap!! You can create so many recipes with it, the possibilities are endless. This mousse is no different. It's creamy, silky, and just decadence. Pudding for adults after the kids go to bed lol!! I like mines frozen because it taste better than the finest chocolate ice cream. I'll leave that up to you, but no matter how you eat it I promise you'll lick the bowl clean after you're done!!

YOU WILL NEED:
1 package-instant chocolate pudding mix(4oz)
1 cup of whipping cream(whipped with 1/4 cup powdered sugar, 1/2 tsp cream of tartar and, 1/2 tsp vanilla extract)
1 & 1/2 tsp rum extract or 1 & 1/2TBSP rum
1/2 tsp-vanilla extract
1/2 TBSP-instant coffee
  Preparation:

This is too easy....

1. Reserve about 2 TBSP of the milk in pudding instructions to disolve coffee, set aside to cool.
2. Use remaining milk to prepare pudding according to package, let sit about 5 minutes.
I always use this time to prepare whipped cream.
3. Stir in coffee, vanilla extract, and rum
4. Gently fold in whipped cream.
5. Pour into a pan or go ahead and place in serving dishes.
6. Wrap in plastic wrap and freeze or refridgerate a least 4 hours, then Serve!!

TIPS:

*If this is frozen for more than 4 hours it will get hard. Just set at room temperature for about 30 minutes to an hour. You can also pop a serving into the microwave for 10-20 seconds.
*The rum flavor can be adjusted to your taste.
