Ingredients:
1/2 cup red beans - soaked overnight
1/4 cup tapioca pearls - optional
1 pandan leaf - knotted
1/4 cup sugar
4 tbsps coconut milk

Preparation:
1. Boil beans in 5 cups of water with pandan leaf for about 15 mins. Lower heat, and let simmer for about 1 to 1 1/2 hrs until beans soften.
2. In the meantime, boil the tapioca pearls separately until they turn clear, then rinse in cold water and keep aside.
3. Once beans have cooked (and water level will have reduced by at least half) stir in sugar and the tapioca pearls.
4. Remove from heat and mix in coconut milk. Serve immediately or enjoy chilled.
