Dhaniya Powder / Daniya Pudi / Podi / Coriander Powder

Dhaniya powder thats used for making Masala Sambar or for Non Veg dishes is a mix of various Spices, roasted and finely powdered. Many of the store bought Dhaniya powder is powder of Raw Dhaniya which used for many dishes would give a raw smell. Therefore a home made Dhaniya powder is the best.

Ingredients :
Dhaniya Seeds : 1 kg Channa Dhal : 100 gmsUrad Dhal : 100 gmsMustard Seeds : 100 gmsMethi Seeds : 50 gmsRice : 50 gms Cumin Seeds : 50 gmsBlack Pepper : 50 gmsCurry Leaves : 1 bunchAsafotida : 1 tea spoon (optional)Oil : 1 table spoonDry roast all the above ingredients separately. Do not brown them, less than golden brown. While roasting Dhaniya add a table spoon of oil. Put them all together and make it a fine powder. If in India you can get this powdered in the flour Mill else use Coffee grinder. Mixier Grinder can be used to powder however it does not make a fine powder.
Use this for all Masala Sambar / Non veg Curries and it does not give a raw taste.
