Dietary changes

By the health nut (Visit website)

It kinda struck me last night, as we were sitting on the couch eating popcorn with coconut oil and a dusting of nutritional yeast, that we don?t eat like the typical American family.

New favorite cookbooks.

Kale chips and quinoa + tomatoes and feta cheese. All the macronutrients (protein, carbs, fat) in one meal sans meat.

Another new favorite from Post Punk Kitchen?snobby joes, which subs lentils for ground beef (recipe here). You can also find the recipe in Veganomicon.

Have I really not written about lentils before?

Lentils are?

in the legume family very good source of fiber (15 g in one cup cooked) excellent source of folate good source of iron, protein, phosphorus, thiamin, and potassium

What?s your fave way to use lentils?

Usually my 19 year old brother avoids anything that smells healthy. I made these muffins from Melissa?s delish recipe, and he devoured them (omitted chocolate chips, added Michigan blueberries!).

What?s your family?s eating style?
