Discoveries

Happy Monday!!


I was a total grump at work today [those poor kids!] but the short work week has boosted my spirits!  YAY!!!


Since I’ve gotten home, I’ve been a busy bee.  I’ve gone grocery shopping, cleaned out my [nasty] car, done dishes, done laundry, cooked dinner, and got some stuff ready for tomorrow.  Shew….I’m ready to sit on my booty the rest of the evening!


Dinner tonight was simple, chicken for the hubby love, tilapia for me, and steamed red potatoes.  But the easy mashed potatoes I made out of my serving of taters leads me to discovery numero uno.


1) Single serving mashed potatoes…….cook potatoes in micro [only 3 for me!] till soft.  Throw in bowl and smash with fork.  Add milk, sea salt, pepper, and Earth Balance butter.  Stir.  Soo easy, and sooo delicious!  I’m seeing mashed sweet potato in my future!


2) Super thick and creamy protein shake:  I’ve gotten really good lately about packing my lunch at night.  Go me!!  Now if I could only get up on time.  I digress.  ;)   Last night I decided to pack a protein shake for my morning snack.  1 cup almond milk + 1 scoop chocolate protein powder + 1/2 tbsp or so of cocoa powder [to kill the flavor of the protein powder].  Refrigerate.



When I spooned into this baby this morning, I was in shock at how thick and creamy it was.  You would have sworn there was a frozen banana, yogurt, or something in this protein shake thickening it up.  Totally simple, totally delicious!  Yum!


3) New product!  Earth Fare literally sent me into a fit the other day!  When I rounded the corner and discovered this display……



….I about died!!! 


I’ve been soft drink free for almost 2 years now.  There are literally no health benefits to soft drinks.  Soft drinks only provide empty calories, or if diet, fake processed sugar sources.  So why is my wonderful cant-do-any-wrong Earth Fare selling Coca-Cola????

After tweeting about this madness, I found out this is Mexican Coca-cola.  It contains real sugar and no artificial ingredients. 


Real sugar or not, I’m still slightly shocked to see coke at my grocery heaven.  :(


4)  My future.  That’s right….I can see my future.



 I see this orange veggie in pie form in my belly in approximately 2 days!  ;)
