Dreamsicle
I woke up this morning to another cloudy, cold day with snow in the forecast. Personally, I'm ready for Spring. We've had more snow in Virginia this year than in the past ten years combined. The only way to fool my frozen brain to believe Spring is just around the corner is to prepare a cookie reminiscent of sunshine and warm weather. The Dreamsicle cookie!!As a kid, my favorite ice cream treat was a dreamsicle. My parents rarely "splurged" on such extravagances as popsicles... fresh fruits like strawberries, peaches, and apples from our garden and fruit trees were considered "dessert" or treats. (I never considered any food occupying the lower half of the FDA's nutritional pyramid a treat....I was born a junk food junkie.) On occasion, my mom would tuck a box of dreamsicles in the grocery cart, knowing I'd consume half of the box before the day was over. Dreamsicles are simple, unadulterated amazingness.... cool, creamy vanilla ice cream with the perfect balance of sweet-tart orange swirled throughout. With all of the incredible ice cream varieties today, the simplicity of a dreamsicle still ranks highest as my favorite ice cream. By now, you must realize my mission in the cookie domain is to create close duplicates of my favorite desserts/sweet treats into cookie form. It only stands to reason that I'd create a dreamsicle cookie. I'd seen other recipes for dreamsicle cookies using Tang orange breakfast drink. Tang seemed a bit too "tangy" for a dreamsicle, so I used the next best thing....orange gelatin. The results were as amazing as the epic dreamsicle ice cream! This cookie has the perfect balance of sweet and tart, just like a dreamsicle. The orange jello supplies the perfect orange flavor. The white vanilla chips provide the right amount of vanilla sweetness. As with all of my other cookie recipes, the instant pudding, (and in this case, the gelatin) yields a perfectly crispy outside, moist and tender inside. This cookie seriously tastes like a dreamsicle....but doesn't drip down your arm! Dreamsicle Cookie Ingredients: 2 1/2 C flour 1 tsp baking soda 1 tsp salt 3/4 C packed brown sugar 1/4 C granulated sugar 1 pkg. (3.4 oz) Jello? cheesecake flavored instant pudding 1 pkg (3 oz) Jello? orange flavored gelatin 2 ( large) eggs 1 tsp orange extract 1 C white baking chips Directions: Preheat oven to 350 degrees. Sift together first 3 ingredients into a large bowl. Set aside. In a large mixer bowl, beat together the butter, brown sugar, and granulated sugar until light and fluffy. Add instant pudding, then gelatin, mixing well. Add eggs and orange extract, mixing until well blended. Scrape down sides of bowl as necessary. Slowly add flour, mixing well. Using a standard ice cream scoop (2 oz), or rounded spoonful, drop dough on to an un-greased cookie sheet For 2 oz cookie, bake at 350 degrees for 16-18 minutes. For rounded tablespoon-sized cookies, bake 12-14 minutes. After one minute, transfer from pan to wire rack to cool. Yield: 15-18, 2 oz cookies. 30-32 rounded tablespoon size cookies. related searches : Dreamsicle
