Easy Orange Muffin
The best thing in the world can happen to you is when you meet new friends and get along with them so well. It makes you even happier when it happens while you're away from your birth country. The Indonesian community in Caracas is small and most of them are Indonesians working at the Indonesian Embassy and their families. During our stay in Caracas I've met 3 new girl friends; Sari, who lives in Mexico City now, and I first met in 2007 then Ita at a farewell party of a diplomatic staff at the Indonesian Embassy in November 2008. It was surprising when we found out that we have the same circle of friends and through her, I've got to know Dian last November. From a coffee morning then we meet more often. I think it's because we're on the same boat living in this not-so-easy-country. We strengthen each other from small problems to big ones. I'm so happy having them as friends. I made these muffins at Dian's when we had cooked together. We made Indonesian fragrant rice (Nasi Uduk), potato patties (Perkedel Kentang), spicy honey lime grilled chicken, vegetable patties (Bala-bala). It was fun cooking and after having lunch together. The plate I used here belongs to Dian. Ingredients: 150 gr self-raising-flour 100 gr sugar 175 gr butter at room temperature 3 eggs at room temperature Fresh orange juice from 3 oranges Directions: Grease a muffin tin Beat the sugar and the butter until creamy. Add the eggs one by one and combine well at each adding. Add the orange juice, combine well Fold in the flour and combine well using a wooden spatula. Pour the batter into a muffin tin. Bake at 180C for 20 to 25 minutes or until set related searches : Easy
