Easy Salad Recipes - Watermelon Carpaccio with Pastrami, Black Berries and a light yogurt and mint dressing!

Easy Salad Recipes are just about all I have energy for with temperatures ranging from 35-40 C here in Cape Town. The beaches are filled to capacity and the cooldrink and ice-cream sales must have escalated tremendously in the last 2 months. No one however feels like cooking and even lighting a fire to have a good old South African braai is not always an option in this heat. To make one of my easy salad recipes, takes no time at all and with just a bit of creativity with different flavors and textures you will have a different salad on the table every night.







Watermelons are dirt cheap right now and it will take a lot to beat the cooling effect of  biting into a chilled juicy wedge of watermelon.  The chilled sweet juices running down your chin giving you an excuse to take just one more dive into the pool brings back many fond childhood memories. I never dreamed that I would one day make a sophisticated salad such as Watermelon Carpaccio with this delicious fruit. This easy salad makes a very elegant starter and it literally takes minutes to prepare. Let us make it together........





Easy Salad recipes -Watermelon Carpaccio


Ingredients


watermelon
pastrami - about 2 slices per person
black berries
                                                         fresh rocket or watercress
                                                          mayonnaise
                                                           plain yogurt
                                                        fresh mint.


Cut the watermelon into wafer-thin slices and arrange on individual plates. I used about 4 slices per person. Pile high with the rocket or watercress and place the pastrami in a wave-like fashion on the top. Make a dressing with the mayonnaise, yogurt and freshly chopped mint and drizzle over the top. Scatter some blackberries on the plate and serve immediately.
