Eating a Pancake Vlog, take 1.

By my little celebration (Visit website)

Good morning! As promised, here’s a video of me eating the winning recipe – a Single Lady Pancake submitted by Shannon at my little corner. Enjoy!

Whole Wheat Single Lady Pancake

adapted from Joy the Baker

makes one large pancake

Ingredients:

1/3 cup whole wheat flour

1 Tablespoon old fashioned

1 teaspoon sugar + 1 dash of stevia sweetener

1/2 teaspoon baking powder

1/4 teaspoon baking soda

pinch of salt

1 Tablespoon apple sauce + 2 teaspoons canola oil

1/4 cup almond milk + 2 Tablespoons buttermilk

dash of vanilla extract

small handful semi sweet chocolate chips

In a small bowl, whisk together flour, oats, sugar, baking powder, baking soda and salt. In a separate bowl whisk together applesauce, oil, vanilla extract and buttermilk. Combine the wet and dry ingredients and stir to combine. The mixture will be thick. Fold in the chocolate chips.

Heat a small frying pan and coat with non-stick cooking spray. Pour in the pancake batter and spread some with the back of a spoon. Cook over medium heat until bubbles form and pop on the surface of the pancake.

Flip. It?s ok if it doesn?t flip perfectly? it?s just you enjoying this pancake, remember!?

Cook until golden brown. Remove from pan and onto a plate. Top with whatever you want!

Here is my untopped, whole wheat chocolate chip pancake, waiting to be devoured.

And here’s my single lady topped with half butter and light syrup, and half peanut butter bananas and honey.

How did I even have the patience to take these pictures? I was salivating the whole time…

Tell me that doesn’t look amazing.

I’m convinced that peanut butter is good on any pancake.

What a stellar combination. I couldn’t have been more pleased.

Thanks again for this amazing breakfast recipe Shannon! It turned out great and I will certainly be making it again.

And thanks again to everyone who entered my “Gimme Your Recipes” contest (stay tuned for a second edition :D ). I looked through each and every recipe and will definitely be keeping them bookmarked for future meals.

Alright, that’s all for now. I do have a new muffin recipe to share so check back in later today to see what I’ve dreamed up this time. I hope you’re having a lovely Monday!

See you soon,
- Dana -
