Egg-white Frittata For A Healthy Breakfast
I was watching Prime Time Morning & saw this healthy breakfast dish, which I'd like to share with you. This dish is perfect for people who have high cholesterol since egg yolks have a bad reputation of having a high level of cholesterol in them. I've added tuna apart from the suggested vegetables, which is an excellent source of high quality protein. Tuna is rich in a variety of important nutrients including the minerals such as magnesium & potassium; more importantly, the beneficial omega-3 essential fatty acids. For vegetarians, simply omit the tuna. Slice the tomatoes into stripes (use only outer layer). Blanch the asparagus & cut into 3 equal portions.
Separate the yolks from the whites. Keep the yolks for other uses. Whisk the whites till fluffy. Add salt & pepper.
Heat oil & add whites. Pour half of the cut vegetables & tuna onto whites. When egg is half-cooked, add the remaining veg. Send the pan into the oven & grill for about 1 - 2mins & you got your lovely Egg-white Frittata for breakfast!
