Egg whites cookies with raisin and nutmeat
This is a melt-in-the-mouth cookies recipe and it’s named “Meeting with an angel”. Many thanks to my sister for this recipe, I made it every year and my guests called back for the recipe.
Ingredients: 3 egg whites 1 teaspoon pure vanilla extract 1 cup sugar 1 cup all purpose flour 1 cup raisin 1 cup walnuts Preheat the oven to 180°C/350°F. Line 2-3 cookie sheets with parchment paper. Beat the egg whites until creamy and glossy, adding sugar and vanilla gradually. Add sifted flour using a rubber spatula. Cut down and through the batter carrefully not to deflate the egg whites. Using the same procedure add raisins and walnuts.
Drop one tablespoon batter 2 inches (5 cm) apart onto the prepared cookie sheets. Bake for 15 minutes in the preheated oven, until the edges are lightly browned. Cool on wire rack.
