EGGLESS PINEAPPLE UPSIDE DOWN CAKE
Saw this in a cookery show and gave it a try. It is very very tasty and yummy. Especially children will love it.. Ingredients: Maidha 2 cups Salt a pinch Baking powder 2 tsp Sugar 1 cup Pine apple juice - half cup Vanilla essence 1 tbsp Butter/Ghee -1 cup Pine apple pieces finely chopped - 2 tbsp Boiled milk fat free 1 glass/250 ml For garnishing-7 to 9 finely chopped pine apple slices(rounds) Cherries 4 to 5 nos-cut into half Method: Grease the cake pan with ghee and sprinkle maidha and spread it across the pan evenly. Dry Mixture Mix maidha, salt, baking powder thoroughly in a vessel. You can also seive the mixture 4 to 5 times to get mixed fully. Wet Mixture In another vessel, mix melted butter (at room temperature) with sugar. Then add pineapple juice, vanilla extract(essence), pine apple crush and milk into the vessel and mix them thoroughly. Lastly add the dry mixture into the wet mixture and mix them well without any lumps. Place 7 to 9 pine apple slices in the greased baking tray.(it is for garnishing as after it is baked when u turn the cake upside down it will be seen as flowers). Pre heat the oven. Pour the cake mixture in the cake pan (on the arranged pine apple slices) Bake it in convection mode, and set for 180 degreesC (or 325F) for 40 minutes After 40 mins the oven will automatically be switched off. Make sure it is baked properly by placing the knife or toothpick when poked should comeout clean. Let the cake cool for an hour. Place the cake holder / tray on top of the cake pan and flip it. (Run the butterknife through the edges of the pan if needed.) Garnish the cake with half cut cherries in the centre of the pine apple pieces and serve. You can, if needed, add a dollop of whipped cream on the slices when seving it. related searches : Pine
