First Nabe of Autumn
Nabe is a one pot dish in which you start with a broth and boil a variety of things in it. You eat as things cook and sip the broth. Once everything is finished you can add udon noodles, rice or mochi to the enhanced broth to round off the meal. I’m usually too stuffed at that point though. For this nabe the broth was a sesame seed base, and we added in mushrooms, enoki mushrooms, hakusai, mizuna, oysters, salmon and chicken balls with yuzu. The boys had udon noodles at the end. We use an iron nabe (pot) on a single electric IH plate and do a gradual add in and eat. A lot of nabe has everything chucked in from the start – but I think this is the best way to end up with a lot of soggy overcooked ingredients. related searches : First
