Fish Ball Noodles
One of the hawker dishes which I really miss a lot is these yummy spicy fish ball noodles.Served either in soup, or dry with the soup on the side, fish ball noodles come with toppings such as sliced black mushrooms, minced pork, seaweed and spring onion, or simply fish balls and slices of fishcake. One can chose from variety of noodles like bee hoon,mee kia,kway teow or even mee pok. all these are available in the Asian Stores. Both has a very different taste form one another.An extremely popular dish with Singaporeans. I just love these noodle very much and never feel bored having them every day and tends to try this at every Hawking centres in Singapore.If the mixture gets too dry or spicy, you can seek relief from the bowl of soup that comes with the noodle! As the soup is made from the fishball stock... I cannot find these noodle in Dallas so prepared them myself and ate with pleasure.,Upon taking my first bite, my childhood memories flashed back-sitting in the hawker centre with friends enjoying..hmmm

For the Sauce Paste:
10 tbsp of dark soya sauce
5 tbsp of light soya sauce
2 tbsp of oyster sauce
2 shallots sliced
1tbsp spicy bean sauce
1tsp red chilli paste
2 tbsp of sesame oil
1 tbsp Chinese cooking wine
1tbsp sugar
3 tbsp of cooking oil
2 shallots (coarsely chopped)
2 cloves of garlic (coarsely chopped)

Put all the sauce ingredients (except shallots, garlic and cooking oil) into one bowl. Mix well and set aside.Heat cooking oil and fry shallots and garlic until golden brown.Add the sauce ingredients and bring to simmer under low fire until the sugar melts,To this add some chopped shiitake mushrooms

For the soup:
1 packet seafood stock
1 packet fish ball
1 cup chopped pak choi
1tsp minced garlic
salt to taste

Add some oil to a pan and saute the garlic followed by the pok choi.Then add the stock and fish bowl bring to boil and set aside.

1 packet of Mee Pok noodles (available in Asian Store)
1 cup beans sprouts
1 cup minced or sliced cooked chicken
chopped spring onions
slice red chillies
fried onions
some lettuce leaves

Preparation Method:
Boil a big of water with a good amount of water. The water should be super salty.Add a handful of the noodles and beans sprouts on a wire-mesh strainer with handle and dip in hot boiling water until cooked through.Then blench them in some cold water and keep aside.In a serving bowl add a couple spoons of the paste,cooked chicken and the noodles. Mixed well and a little red slice red chillies,lettuce leaves,spring onions and fried onion.Pour the soup in a separated bowl,
For the soup version-just add the noodles to a bowl and pour in enough of the soup and add the sauce paste if u like or just eat without them. Beleive me the entire bowl will vanish in seconds:))))
