Fish curry with coconut
Having made a meat curry with Sammy yesterday, it was Carmela's turn today. She had made a "fish spice mix" (mixed spices, cinnammon, coriander, peppercorns, bay leaves), and came back from Tesco with some haddock fillets and cherry tomatoes, so this was what we came up with.
![]() Curries are quite a good thing to make with kids - you can do the chopping and other preparation before the kids are even in the kitchen, then just lightly supervise as they fry, stir and stew. My next project is to get them making some slightly more ambitious and distinctive spice mixtures at home. ![]() Ingredients 1 onion vegetable oil 2 cloves of garlic 2.5 cm chunk of fresh ginger 3 teaspoons of good curry powder 3/4 tin of coconut milk 500 g haddock fillet 1/2 teaspoon of salt 150 g cherry tomatoes Method Peel and finely chop the onion, peel and mince the garlic and ginger. Cut the haddock into good-sized chunks. Halve the cherry tomatoes.Gently fry the onion in vegetable oil until the onion is almost cooked. then add the garlic and ginger and fry for another minute.Add the curry powder and stir-fry for 10 seconds or so, then add the coconut milk, haddock and salt, bring to a boil, turn heat to low and simmer for 3 or 4 minutes. Add the cherry tomatoes and cook for 30 seconds or so until they are heated through. Serve with rice or naan. related searches : Fish
