Foccacia

Focaccia is a flat Italian bread which is usually topped with olive oil and herbs. For more information on Focaccia, read here. I have book marked this very easy recipe from Tracey. She calls this as no fuss Focaccia. The recipe is so simple with minimum ingredients. Yesterday I tried it and it came out great. It had a thin crispy crust and soft interior. My daughter liked it a lot. I just applied butter and sprinkled some sugar on top. She just loved it. I halved the original recipe and I got a small a Focaccia which I cut into 6 squares. It was gone within 30 minutes. I am giving you the halved recipe below.

Ingredients:

Warm Water-3/4cup

Olive oil-1 1/2tbs+1tbs

Salt-1tsp

Flour-1 3/4cup

Instant Yeast-1/2tbs

Dried Herbs-2tsp(I used Oregano and basil)





Procedure:

1. Grease a 9" * 5 1/2" tray with oil and drizzle 1/2tbs olive oil over the oil layer.

2. In a wide bowl, mix flour, water, yeast, salt and 1 1/2tbs oil and prepare a sticky dough. Use a wooden spoon to mix.

3. Transfer the dough to tray. Oil your finger tips and press the dough into the sides and corners. Level the dough.

4. Cover with a wrap and allow it to rise for 1 hour.

5. When double in size, Oil your finger tip and make dimples on the surface. This is to ensure that the bread remains flat during baking. 

6. Coat the top with the remaining olive oil and sprinkle the herbs.

7. Preheat oven to 175C. Bake for 30-35 minutes or till the crust is brown in colour.

8. Remove to a wire rack and let it cool for 5 minutes.

9. Remove the bread from the tray and cool it completely on the wire rack.

Transfer tray to wire rack


Remove from tray and cool after 5 minutes
