Yup, I’m officially buying more organics, particularly organic dairy.  :)


Totally slept through/turned off my alarm this morning and missed my run with Kim.  Way to start off the day.


Breakfast


While I really wanted oats this morning, I had veggie and eggs that needed to be eaten.  Frittata followed…..



made with:



3 egg whites
1 egg
onions
spinach
tomatoes


Along with my frittata I had 1 slice of cinnamon raisin Ezekiel bread with butter and french pressed coffee.  Pretty good, but oats are on the menu for tomorrow:)


Lunch


My lunch box [with my snack and water] made it to work, but my box of leftover pizza didn’t.  :(    Earth Fizzle and its hot bar fixed my forgot-my-lunch problem



I love their hot bar. The hot bar menu changes daily and offers plenty of options for filling a plate.



My plate was filled with:



maple glazed tilapia
vegetarian stuffing
cinnamon sweet potatoes
salad [with no dressing]
fresh melon


I also had an afternoon pick-me-up of coffee with skim milk and truvia



While I was at Earth Fare, I used this week’s online coupon [free watermelon with a $5 purchase]…….you can’t beat that!



Just in time for the 4th of July!


Snack:


I was looking so forward to my afternoon snack that was packed in my lunch box and had actually arrived to work with me, unlike my lunch.  However, there was no time for the original snack therefore, I grabbed a bar for quick eats



I’ve officially decided that I’m a chewy granola bar girl.  This is a crunchy bar.  Not my fav.


Dinner


I’ve had strawberry salsa on the brain this week!!



So colorful!!!



And sooo delicious!


I also whipped up some chicken for open-faced spinach sandwiches



I decided to make tonight’s “sandwiches” on some of my Doctor Kracker flatbreads that the company sent me to try and review



My plate:



I fixed myself 1 flatbread with chicken and strawberry salsa and then topped a bed of spinach with chicken and salsa



I really like the Doctor Kracker flatbreads.  They are super crunchy.  They weren’t good, however, with lots of toppings because they break easy when you bite into them and all the toppings fall off…..therefore, fork was required for this meal. 


We love strawberry salsa!!  Dang it’s good!



Some dark “save an animal and eat some chocolate” chocolate followed dinner…..today was a chocolate kind of day!


I’m thinking bubble bath and bed!  Night!  :)
