French Beans with Potato Dry
Hi all,
This is a nice green vegetable that is nutritious and quite easy to make. The method for making all the dry vegetables are very much similar. We just have to make sure that they don't get burned. Also some have tomatoes added for sourness while some other may have raw mango powder. Make sure to add less salt in the beginning because less quantity of salt can be adjusted afterwards while if it is in excess, the dish will spoil and there can be no adjustments. Whenever I have went outside to eat, I have noticed that they have added less salt in all the dishes. Also garnishing with coriander leaves gives added flavor and nice look. Serves- 4 Preparation Time- 20 minutes Ingredients: 200 gm French Beans Chopped in 1'' pieces 1 big potato cut in 1'' cubes 1 onion chopped 1 tomato chopped 1 tsp ginger garlic paste 1/4 tsp turmeric powder 1/4 tsp asafoetida powder(hing) 1 tsp salt or as per taste 1 tsp coriander powder 1/4 tsp garam masala powder 1 tsp cumin seeds (jeera) 1 green chili chopped (or 1/2 tsp red chili will do) 2 bay leaves 1/2 cup coriander leaves chopped Method: Wash the vegetables thoroughly. Keep aside. In a pan, add 2 tbsp oil. When oil is hot, add cumin seeds,bay leaves,asafoetida and green chili. Stir for 5 seconds. The aroma of hing fills the kitchen. Now add the onions. Stir and add ginger garlic paste when the onions turn transparent. After 1 minute, toss in the tomatoes. Keep stirring. When the tomatoes are tender (it will take not more than 5 minutes), add vegetables. Also add salt,coriander powder,turmeric and garam masala. Mix well. Sprinkle some water and cover the lid of the pan. Lower the gas flame and cook for 15 minutes. Keep stirring in between to avoid burning. When the vegetables are done, turn off the flame. Keep the lid closed for few minutes so that the vegetables get steam cooked and the potatoes are tender. If the vegetables stick to the pan while cooking, you can add some water and then close the lid, otherwise the vegetables will burn. Garnish with coriander leaves and serve with rice,dal and rotis. related searches : French
