Fresh Snapper On The Boat and The King Of Romance

Line grill with foil
1st layer on the foil - Lemon Slices
2nd layer - Fresh Red Snapper Fillets
Drizzle with Olive oil, sprinkle with Cajun seasoning of your choice, salt and pepper.
Squeeze additional lemon juice over the top, close grill.  Keep on fishing. Check occasionally until flaky.  Do not overcook!  Serve with additional lemon slices if desired.
 
My husband Jess IS the King of Romance and has been forever!  For our anniversary, he arranged the perfect offshore fishing trip for me.  I know, it sounds a little strange to most, but I LOVE to fish.  I've been saltwater fishing with my dad since I was a very little girl and   it is one of my favorite things to do.  I can totally relate to the bumper stick "I'd rather be fishing".  Well our trip was perfect!  Jess and Dad arranged the trip to go out with our friend Danny and his son in law Nathan.  Danny, Dad and I have fished many times together and always have a great time.  Danny's boat is the one place I know I won't get treated like a girl and I get to fish like one of the guys.   That didn't sound right.... you just have to be a girl and like to fish to understand.  

 So the plan was to leave Houston early in the morning, fish and troll all the way offshore about 85 miles, spend the night offshore and fish all the way back in.  It was great!!  Nathan was unbelievable, not only can he cut bait, tie knots and set up trolling rigs, he makes a mean ceviche!!!  Which, by the way, we ate for breakfast because we stuffed ourselves on the Grilled Red Snapper the night before.  I have never seen anyone work as hard as Nathan did!!  What a great guy!

Breakfast of Champions ~ Ceviche


Nathan's Quick Ceviche


2 containers of store bought Pico De Gallo from produce section
4-6 Limes for juice
onion, finely chopped
jalapenos, finely chopped, to taste
cilantro, diced, to taste
salt and pepper, to taste
1 pound fresh red snapper filets, cut into chunks


Combine all ingredients, let sit overnight for fish to "cook". 
Serve with tortilla chips
