Fried Instant Noodle

Time seems to be so limited these days. I'm exhausted. Not to mention about new recipes, cuz I'm lazy to think of one. Endded up, I just go back to some old one-pot-dishes or simple fried stuffs. Fried instant noodle was our dinner the other day when I came back late. Simple and yet satisfying.

Fried Instant Noodle
Serves 2

Ingredients:

2 pcs of Vit's plain instant noodle
1/4 of a small cabbage, sliced thinly
14 small prawns, shelled
choy sum, trimmed
3 clove of garlic, chopped
1 tbsp of chili paste
3 tbsp of light soy sauce
1 tbsp of oyster sauce
half tbsp of dark soy sauce
2 eggs
3 tbsp of extra virgin olive oil

Instructions:

1. To prepare the noodle, just add the noodles (x2 pcs) to boiling water and cook for around 3 minutes or until soft. Then, rinse in fresh water and drain.

2. Heat 1 tbsp of oil in a wok, and cook the scramble egg. Set aside.

3. Heat 2 tbsp of oil in the same wok, saute garlic till fragrant. Add in prawns, cabbage and choy sum to stir fry. Add a tbsp of oyster sauce and 30ml of water. Let the vegetables saute for a while until it's cook.

4. Pour in the noodle. Stir in dark soy sauce, light soy sauce and chilli paste to mix well. Add in the scramble egg, and continue to stir fry for 3 minutes.
