Fruitful

Shew….did that 3 day weekend fly by or what?!?!  I could have used just 1 more day off!  :)


Last night, after blogging I decided on a late night snack of Muesli



I ate my muesli cold with skim milk……I didn’t measure last night’s bowl because the bag was just about empty so I just finished it off……usually I measure. Also last night, I became acquainted with a new friend:



Meet my IT band foam roller!!!  I saved a few bucks by buying a large pool noodle instead!  Mine was 4 dollars compared to the 20 dollar ones I’ve looked at online….sweeeeet!  I’m hoping frequent foam rolling will lend itself to running sometime in the near future!!!


I did end up getting out of bed this morning for a solo visit to the gym…..ohhh Kim and Tyler I missed you all!!!!!  On the way to the gym I guzzled down a protein shake.



Shake was made with 1 scoop whey chocolate protein powder and 10 oz of skim milk…..it was supposed to be soy milk, but in my still-half-asleep state skim is what made it into the bottle.  :)


I got in 45 minutes of cardio, a stretch session, and some abs while at the gym.


My real breakfast was immediately consumed when I got home from the gym:



1/2 cup oats
1 cup H2O
1 tbsp wheat germ
1 tbsp flax seed

Stir ingredients together and microwave for 2 minutes.  Topped with blueberries, sliced strawberries, and drizzled with agave nectar. 




On the side of this delicious fruit-topped bowl of oats I had a ginormous mug of chocolate-kiss coffee (Fresh Market all the way baby!) with 1 truvia packet and steamed skim milk. 


Headed into work….Monday’s aren’t too bad….which I enjoy because it lets me ease into my week.  Due to poor morning planning, I didn’t have time to pack lunch….thank goodness I live about 5 minutes from work!  Came home for lunch today:



I had 2 chicken quasadillas (on wheat) that were leftovers from dinner last night at Jack’s City Grill.  Also had a sliced up apple and Stonyfield OIKOS Greek yogurt.  The yogurt served as my sour cream for the quasadilla and dip for my apple. 


Throughout the rest of the afternoon, I snacked on a Larabar and 2 slices of dried apricot.



I love the Peanut Butter Cookie Larabar AND dried apricot!!!! Mmmmm!


All day I was craving the salad that I had made yesterday for Easter. It was soooo good!!! So for dinner, I remade it.



Freakin’ YUM!!  I topped my salad with just a little Strawberry Balsamic dressing…..but this salad is sooo flavorful alone, not much dressing is needed at all!!


That was a pretty quick post.  I’m feeling some dark chocolate chips in my future!!!  :)   Also, some clean-my-house and hubby time!!!!
