Fudge, Chocolate, and Holiday Baking

Hi Friends!  I hope you've had a nice, relaxing, long holiday weekend!  I hope it was filled with mellow times with friends, family, and loved ones.  And that you ate, drank, and were merry!

Did anyone do any shopping over the weekend, either Black Friday, or otherwise?  I know CSN Stores has a Corner TV Stand.  Anyone need one?

Moving along...
Since my pan of Vegan Gluten Free Rice Krispie Treats with Chocolate Frosting that I made for Thanksgiving was gone....
This frosting is thick, sweet, and delicious! 

....And I had an event that I needed to quickly whip up a dessert for, I decided to make Jessica's 3 Minute Fudge
It's not a vegan recipe however you could probably swap out the sweetened condensed milk with full-fat coconut milk (don't use light coconut milk; I have had less than stellar results with light coconut milk in vegan fudge).  Just a guess that full fat coconut milk would work here.

Unlike Jessica, I didn't actually use measuring cups.  I just eyeballed everything and threw it in a bowl.  As I always do.  Measuring cups just create extra dishes.

Spread it into a pan


Into the freezer it went....

...and out came this fudge!




Skylar was begging me for some.  "Please, Mommy, Pretty Please?"  But the child of a food blogger knows: Pictures First.  Then, Eat.


 Fighting off her cold, but not too sick to forget how to turn the charm on!

1. Best Thing You Did or Ate over the weekend?
I spent time with my family, I cooked a Thanksgiving meal and cleaned up, 100% by myself, from start to finish.  And Scott's still thanking me.  So that was a "best thing" for me.

2. Do you like Fudge? 
Is the Pope Catholic?  Yes for me for sure!

3. Do you like to do Holiday Baking?
I don't do "holiday baking" per se because I am usually gone over the holidays but I love to bake in general.  I haven't always been this way!  No, my god when I was in my early 20s my idea of baking was going to see what Whole Foods or the Corner Bakery had!   

4. What recipes are you dying to try out for the first time?
I want to check off all the friends' recipes off my baking list.  However, I am running out of time before my trip to make quite that many desserts...haha!


5. Any tried and true recipes that you make for the holidays that you plan to make again?
I am usually traveling over the winter holidays so nothing jumps out at me that I will "make" again.  Oh wait, yes, a pina colada.  I will have one of those again.  Even though I may order it out, and not "make" it myself.  haha!
