Fudge Sauce
Here is a pretty quick and easy fudge sauce, and it is really good. I was telling my wife I could put it all over... O wait, never mind, I cannot go there! LOL.
Anyway, it's that good. Fudge Sauce: 4 ounces butter 3 c heavy cream 3 1/4 c. corn syrup 8 ounces choc. 1 pound 12 ounces sugar 1c cocoa. First of all, you will want to use the best quality chocolate you can find. You do not want to use chocolate chips. If you buy it in a block, chop it up first. Bring the heavy cream and corn syrup and whole unsalted butter to a simmer, then add the chopped chocolate. Melt the chocolate over very low heat; this will scorch and burn. In a separate bowl, mix the sugar and sift the cocoa really well. Blend the two together. This will prevent lumps in the cocoa and help it blend into the cream mixture. Then re-sift right into the chocolate mixture. Cook over low heat until you can rub some chocolate between your fingers and feel no grittiness from the sugar. If it is smooth, then it is done. After it is smooth, pour into a big bowl and set into a bowl of ice water to cool. Stir it to help it cool faster. It will thicken while it cools. This is really good on ice cream or any dessert.
