Gâteau à l'orange et aux gingembre / Flourless orange and ginger cake
Oh wow! A orange ginger cake! When I came across the Flourless Orange Ginger Cake on Chocolate and Zucchini, I knew I had to try it. I had never had an orange cake before and it sounded so good! I love orange and ginger and I thought it was such a great idea from Clothilde to combine them together in a cake. That cake was ssooo good! It was moist with a delightful combination of ginger and orange. Also, the ground almonds gave such a delicate, but amazing almond taste to this cake. Ingredients ***For the Cake***3 small oranges or 2 large oranges 6 eggs 250 mL sugar 330 mL ground almonds a thumb-sized knob of fresh ginger 60 mL crystallized ginger; diced 5 mL baking poweder ***For the frosting*** Zest and juice of one lemon 75 mL thick sugar crystals Instructions 1. Scrub and clean the oranges. 2. Put the oranges in a medium sauce pan and cover them with water. 3. Bring to a boil and let simmer for 2 hours. 4. Puree the oranges in a food processor. 5. Preheat the oven at 375 F degrees. 6. Grease a 24 cm (8-inch) springform cake pan. 7. Peel and chop the ginger. 8. Beat the eggs with a fork in a large bowl. 9. Whisk in the orange puree, the ground almonds, the sugar, the baking powder and the fresh ginger until well blended. 10. Fold in the crystallized ginger. 11. Pour the batter in the cake pan. 12. Bake in the oven for about 1 hour or until puffy and golden. 13. Let cool. While the cake is cooling, 14. Mix the sugar crystals, the lemon juice and the lemon zest in a medium bowl. 15.
