![]() INGREDIENTS 1 cup coarsely grated carrot 75g chopped dried apricots 80g sultanas 150g apple, peeled, chopped 60ml apple juice 60ml orange juice 180ml water 55g raw sugar 150g GF self-raising flour 75g GF plain flour 1 tsp baking soda 3 tsp ground cinnamon 400g bananas, sliced thinly NOTE: This recipe contains no Butter or Eggs. METHOD Preheat the oven to moderate (180°C). Grease a 14cm x 21cm loaf pan, line the base with baking paper. Place grated carrot, apricots, sultanas, apple, juices, water and sugar in a medium saucepan. Bring to the boil then simmer, uncovered, for 15 minutes. Transfer to a medium bowl; cool to room temperature. Stir in the sifted dry ingredients and banana. Spread the mixture into the prepared pan. Bake in a moderate oven for about 1 hour. Turn onto a wire rack to cool. Suitable for freezing. related searches : Gf
