Gluten Free Homemade Chicken Tenders - TMTT

Our adventure into the Gluten Free world continues..

We are actually doing REALLY well. It?s been about 3 weeks now and the only major issue we?ve had with going Gluten Free is finding things to snack on that fill us up.

We rarely snack on sugary type snacks, but we DO like our crackers and pretzels. Both of which have gluten, so this has been a hurdle.

I placed an order online for large amounts of different flours that we can use (like rice flour and tapioca flour), but they haven?t arrived yet and we haven?t been able to do any real baking, thus no snacks.

We have been snacking a lot on celery, carrots, and popcorn ? which is all good. But I do enjoy a good cookie now and then. So we wait patiently for the flour delivery.

Until then.. I shall share with you our version of Homemade Chicken Tenders.

My daughter and I made these last night using an old recipe we had and just tweaked it to fit our gluten free needs.

I purchased a container of gluten free bread crumbs from our local bakery, which has turned out to be a great purchase. We?ve used it in quiet a few recipes and also as a little ?crouton? type topping on our salads.

I got a great deal on chicken breasts the other day at Sam?s club, but MY GOODNESS they were BIG breasts ( I hear you giggling DH ).

I mean really, chickens do not grow Naturally this big. Even though it says All Natural, I?m thinking these birds are fed something to ?enhance? their breasts. ( stop giggling )

After cutting them into tender size pieces, my daughter dipped them in the egg whites and then into the bread crumb/parmesan cheese mixture. We then baked them at 450 degrees. We then made some buttered noodles with rice flour pasta and a nice mixed green salad and Voila.. dinner is served.

* Side note.. you can?t see it in this picture, but we LOVE to watch TV while we cook.. but not just any shows.. I Love Lucy is our favorite!

 

Now if I was the Perfect Housewife I would have taken pictures of the finished project.. but I since I?m The Not So Perfect Housewife.. I forgot.

Sorry.. I was hungry. No time for pictures when your hungry.

But they tasted great!!
